Blueberry Pancakes

These deliciously fluffy pancakes are not only wholesome and high in protein but they’re a definite crowd pleaser.

•1/2 C quick cooking oatmeal (uncooked)
•1/3 C flour of your choice
•1/3 C egg whites
•dash of nutmeg
•vanilla extract to taste
•1/2 C water (incorporate gradually, stirring in between. Amount needed may vary depending on type of flour used)

Preheat pan or griddle over medium heat.

Gently stir to combine; don’t over work. We want light, fluffy pancakes! Once mixed, gently crush 1/4 C of blueberries in your clean fingers (just enough to release some juice) and fold them into the mix.

Spray pan with nonstick cooking spray and spoon batter onto pan. You should have enough for three pretty decent size pancakes. You could probably get four smaller ones and share! They’re quite filling. Sadly, I could barely eat two. :(
