These oats are my go-to meal when I know I’m going to need the extra energy to get me through a long day or tough training session. They will feed your mind, muscle and tummy.
Since I usually only make it for myself, I like simplicity and easy clean up. This can easily be made on a stovetop, however.
• 1/2 C plain quick cooking oats
• 1/3 C liquid egg whites
• Scant 1 C of hot water.
Combine all 3 ingredients in a microwave safe cereal bowl, big enough to allow room for the oats to expand. Stir very well. Microwave for 1 minute. Stir again. If your water wasn’t quite hot enough to begin with, you may need another 30 seconds of cooking. Once cooked, add
• 1/4 C fresh blueberries
• 1 tbsp unsweetened coconut flakes
• 1/8 c raw, chopped walnuts
• A couple dashes of cinnamon
• 1 tsp ground flax (optional)
• 1 tsp vanilla (optional)
Mix. Eat. Enjoy.
