Hello all! Another day in paradise here in southwest Florida. More specifically, a little place called Matlacha Island (Mat-la-shay). It’s quaint and rustic, with Key West-ish vibe.
I love the outdoors and wandering around in unfamiliar territory. Something about not knowing where you are and just exploring the world really appeals to me. Maybe that’s why I’ve driven across the country by myself multiple times. Jenn, the Wanderer. Or maybe I was just a truck driver in a past life.
Speaking of…. I am planning a trip to Vancouver/ Victoria B.C. later this summer. I cannot tell you how insanely excited I am to explore up there: the turquoise lakes, waterfalls and scenery. So, I ask of you, do you have any travel tips and suggestions? I would love to get some ideas!
Now, back to exploring….
As promised, here is a recipe that is very close and dear to my heart… and stomach.
I’ve recently learned that my skin does not like gluten. And that doesn’t work well with me. I love gluten. And cookies. I need them to feel complete. So, I baked and ate and baked and ate until my favorite soft batch cookie recipe had become a gluten free edition that anyone will enjoy! But, you may just want to keep them all for yourself. Happy baking!!

As I work on revamping my blog, I figure I’d give my fitness logo a facelift as well. Why not, right? So, here it is; clean and simple, just the way I like things. This may change but here is the first rendering.

I’ll be posting my insanely delicious, crunchy-chewy, gooey chocolate chip cookies. And they just so happen to be gluten free. But don’t let that scare you! These are better than most recipes with gluten… Scratch that. Not most. ALL! Bold statement, I know. These bad boys even have gluten lovers fooled… and I’ll never tell. ;) Check back later today for the unveiling.
After a very long hiatus, I’m back and ready to dive in head first. No dipping the toes in, no baby steps, just taking the plunge and blogging until my heart’s content.
Where have I been, you ask?! All over… I packed up and drove out to San Diego in my coupe with nothing but me and a carful of my belongs. After about 5 months or putzing around, I decided to head back to Florida and be closer to my family on the Gulf coast and never looked back. I also vowed to never make that trip again. Have you driven through Texas before? Oye vey!
The past couple years have been good to me. I have a fabulous job as a personal trainer, with clients I adore and enjoy working with. A new (not so) puppy-like English Bulldog named Ruger, who is the light of my life and total pain in the butt but I love him none the less. I’m in the best shape of my life, mentally and physically, with no plans of slowing down.
So, if you’re still following me, get your pantry stocked up and your gym clothes out because we’re gonna rock this summer of 2016!
So yesterday I threw together these amazingly fluffy and soooo delicious chocolate chip pancakes. I ended up just dumping ingredients in a bowl and hoping for the best. Well, how sweet they were! And…. I’m totally willing to take one for the team and make another batch with more precise measurements. Any takers?! ;)

Well, folks. It looks like I took quite a hiatus! Unintentional, to say the least. But, well, sometime life happens and things get lost along the way. Do I even have followers anymore? It’s me, guys. Are you out there?? Is it me you’re looking for? Hah ok, ok, enough with the jokes.
A lot of things have happened since I last wrote. I quit my desk job in December to finally put my nose to the grindstone and finish my Sports Nutrition Certification. Yay!!
Becoming certified is something I’ve been trying to achieve since I began this blog last year. Having a full time job just wasn’t allowing me to pursue it. So, I took a leap of faith and here we are! I’ve completed my course and am just waiting to attend my CPR course and brush up on my knowledge. Being a Certified Personal Trainer AND Sports Nutrition Specialist will allow me to combine my passion for fitness with my love of cooking. I have so many ideas and things in the works! Not too much longer. So, time to buckle down these next couple weeks and go for the gold! dun dun dun dunnn!! I have faith, though. I have to, right? (I AM a pretty horrible test taker; for the record.) But if I don’t believe in myself, who will? Too cliché??
I’ve still been cooking up a storm, training and have even changed my diet. Remember I was carb cycling before? Well, stay tuned because what I have to say about the long term effects of caloric deprivation might hit home for a few of you struggling with weight loss. Needless to say, I’ve slowly worked my way up to eating almost double what I was before, way more carbs and am stronger than ever! I’m gaining the muscle I was striving for and have found that elusive balance so many of us are in search of.
Life has been good to me; as I hope it has for you, too, my friends. 2014 is looking to be a fantastic year, with every opportunity I could imagine and I look forward to sharing my journey and upcoming projects with all of you!
